We review about 40 restaurants a year in Minneapolis/St Paul. But this weekend we are in Paso Robles. Last night we took you to a pizza place. Tonight without leaving our hotel block we are at Ristorante IL Cortile a fabulous Italian restaurant.

 Liam was our mixologist originally from New York. 

We started with warm bread with olive oil & balsamic vinegar. As good as anything in the Twin Cities. 

For an App we chose Local heirloom tomatoes, buffalo cheese with Truffles. We don’t make our cheese from buffalo but I’m impressed. 

Basically the dish was tomato pieces surrounding a big piece of buffalo Mozzarella cheese edged with Buffalo sauce. It something most people could make at home for an appetizer with tomatoes and cheese… I love it when we can take home recipes we love in restaurants. 

I’m born in WI and made cheese my high school years, mostly mozzarella. But your Buffalo cheese is similar arguably better. I still think i’m being played coming from buffalo. 

For an entree we had: Ravioli Mais Dolce: Sweet corn ravioli with ricotta, guanciale, market mushrooms in a light butter mint sauce. 

I have never had pasta taste like sweet corn. My palate sent an emergency message to my brain. Cut off the eyes they have drank too much, this is not pasta it’s sweet corn… wait… WTF! 

You are going to need reservations to get in here, but they keep a few places open at the bar which we sat in before they opened. The bill was under $75 because we shared everything but the two drinks. 

A trip to Passo would not be complete without visiting Liam & Ristorante IL Cortile — eating dinner with my love at Il Cortile Ristorante.
